This homemade yogurt is one of the best foods you can eat to kick start your morning. But did you know that your EasiYo yogurt can also be used in your baking to replace heavy creams and milk?
Loved by all, scones are not only one of the easiest British teatime treats to make, but they are also one of the most delicious. In this recipe, EasiYo yogurt replaces the milk or cream used in the traditional recipe for a healthier alternative without compromising on taste. Furthermore, as EasiYo Yogurt is gluten-free and wheat-free, it can be used to replace these ingredients in gluten-free baking as well.
So, give it a go, shake things up, and start making the most of your yogurt with this easy to follow recipe:
375g self-raising flour
½ tsp salt
2 tbsp sugar
1 egg lightly beaten
80g of sultanas or currants
250ml EasiYo yoghurt for the scone plus more to serve as an alternative to cream or butter - we like Sweet Greek Style with this recipe.
Sift the flour, salt and sugar into a bowl then rub in the butter until the mixture resembles coarse breadcrumbs.
Add sultanas/currants, the beaten egg and the yogurt to the mixture in the bowl, mixing quickly with a knife.
Turn onto a floured board and knead several times. Then, roll out the dough to approximately 2 cm thick and cut into squares or into rounds with a floured 4 cm crinkled cutter. When you have cut as many as you can, knead the remaining dough together again and repeat.
Arrange rounds/squares close together on a lightly greased baking tray.
Bake in a preheated oven 220°C for 10-15 minutes or until lightly browned.
Cool on wire racks or serve warm with butter or clotted cream and jam. Or for a healthier alternative serve with sweetened Greek Style Easiyo Yogurt and jam. Enjoy with a hearty cup of tea!
