Dez is Group Development Chef for Brend Hotels, in charge of 11 hotels, 2 restaurants and over 75 chefs in the South West. He has an active role in training and developing of chefs within the hotel group, and works closely with farmers, fishermen and producers.
As Head Chef at Falmouth’s Royal Duchy Hotel, Dez helped them achieve 4-star status and gain 2 AA Rosettes. He also received accolades at the Greenbank Hotel in Falmouth, being awarded their first AA Rosette within six months of joining them as Head Chef.
Prior to this, Dez has worked in operations as varied as Alverton Manor Hotel in Truro, the Terrace Restaurant at the Metropole Hotel NEC Birmingham, the Ritz Hotel, Piccadilly, the Law Courts on the Strand and a private hospital on Baker Street.
Dez is actively involved and a member of the Craft Guild of Chefs and the British Culinary Federation of Chefs, and can often be seen at food festivals across the UK. He has catered an event for The Queen and the steward’s dinner at the Devon County Show, and as well as entering competitions he also mentors young chefs through them.
