After completing the Specialised Chefs course at Bournemouth and Poole College, Matthew spent 6 years at one of the best country house hotels in the UK, Chewton Glen, working under such great head chefs as Pierre Chevillard, Alan Murchison and Luke Matthews.
In 2007, Matthew moved to The Atlantic Hotel on Jersey, becoming head chef in 2010, and then joined Lewtrenchard Manor as head chef in 2013. Matthew is passionate about using local seasonal ingredients, and works closely with Lewtrenchard Manor's gardener Martin to grow much of the produce for his menu in the hotel's walled kitchen garden.
